Step-by-Step Instructions
Step 1: Melt the Chocolate Base
Set up a double boiler (place a heatproof bowl over a pot of simmering water, ensuring the bottom of the bowl doesn't touch the water).
Add the chopped dark chocolate and unsalted butter to the bowl. Stir gently until completely melted and smooth.
Remove the bowl from the heat and let it cool slightly for 3–4 minutes until it is warm, not hot.
Step 2: Prepare the Brownie Batter
Whisk the granulated sugar into the warm melted chocolate mixture until combined.
Add the eggs one at a time, whisking vigorously after each addition. Continue whisking for about 1–2 minutes until the mixture looks glossy, thick, and slightly pale.
Stir in the vanilla extract.Sift the all-purpose flour, cocoa powder, and a pinch of salt directly into the wet ingredients.
Using a silicone spatula, gently fold the dry ingredients into the mixture just until the flour disappears. Do not overmix, or the brownies will lose their fudgy texture. The batter should be thick and velvety.
Step 3: Preheat & Prep the Sandwich Maker
Turn on your sandwich maker and let it preheat completely.
Once the indicator light shows it's ready, use a pastry brush to generously coat both the top and bottom triangular plates with ghee or melted butter. This ensures a crisp exterior and easy release.
Step 4: Pour and Cook
Spoon the thick batter evenly into the bottom cavities of the sandwich maker. Fill each triangular mold about 3/4 of the way full (approx. 2.5 to 3 tablespoons per triangle). Do not overfill, as the batter will expand slightly.
Gently close the lid of the sandwich maker and lock the clip.
The Timing: Let them cook for 6 to 8 minutes. Avoid opening the lid during the first 4 minutes to allow the structure to set.
Check for doneness: Insert a toothpick into the center of a triangle. It should come out with a few moist, fudgy crumbs attached, but no wet batter.
Step 5: Cool & Release
Unplug the sandwich maker.
Use a heat-resistant silicone spatula or wooden spatula to gently lift the hot brownie triangles out of the molds. Avoid metal knives or forks to protect the non-stick coating.
Place the brownie sandwiches on a wire cooling rack. They will feel soft initially but will firm up into a perfect fudgy consistency as they cool.
