  • For the Turkey Burgers
  • 250 g approx. 0.5 lb lean ground turkey
  • 1/4 cup finely grated apple gala or honeycrisp work beautifully; squeeze out excess moisture
  • 1 tablespoon pure maple syrup
  • 1 tablespoon finely chopped green onion or chives
  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon olive oil for cooking
  • For Serving
  • 2 burger buns toasted
  • Lettuce leaves
  • Thinly sliced sharp cheddar cheese optional
  • Thinly sliced red onion or extra apple slices

Method

  2. Mix the Sauce
  3. In a small bowl, whisk together the Dijon mustard, maple syrup, and mayonnaise until smooth. Cover and set aside in the fridge so the flavors meld.
  4. Prepare the Burger MixtureIn
  5. a medium bowl, combine the ground turkey, grated apple, maple syrup, green onion, garlic powder, salt, and pepper. Gently mix with your hands just until combined—be careful not to overwork the meat, or the burgers can become dense.
  6. Shape the Patties
  7. Divide the mixture into two equal portions and shape them into patties about 3/4} inch thick. Press a slight indentation into the center of each patty with your thumb (this helps them cook evenly without puffing up in the middle).
  8. Cook the Burgers
  9. Heat the olive oil in a non-stick skillet or grill pan over medium heat. Add the patties and cook for about 5 to 6 minutes on the first side. Flip and cook for another 4 to 5 minutes on the other side, or until the internal temperature reaches 74°C (165°F). If you are adding cheese, place a slice on top of each patty during the last minute of cooking and cover the pan with a lid to let it melt.

  11. Spread a generous spoonful of the Maple-Dijon sauce onto both sides of the toasted buns. Place a patty on each bottom bun, then layer with lettuce, red onion, or extra apple slices. Top with the remaining bun halves and serve immediately while hot!
