Prepping the Flavor Infusion
Take the sun-dried tomatoes out of the jar and let the excess oil drip back in. Save this oil! Finely mince the tomatoes until they almost resemble a paste.
In your large mixing bowl, combine the double-minced beef, minced sun-dried tomatoes, grated garlic, and grated ginger.
Evenly sprinkle the smoked paprika, dried oregano, red chili flakes, cracked black pepper, and salt over the meat.
Shaping the Patties (The Chef's Secret)
Using clean hands, gently blend the ingredients together. Do not overmix, as overworking the meat makes the burger patties dense and tough.
Divide the mixture into 4 equal portions.
Shape each portion into a smooth, flat disk about ¾-inch thick. Press a slight indentation (a dimple) into the center of each patty with your thumb. This prevents the burger from puffing up into a football shape while cooking and ensures it stays perfectly flat.
Searing to Perfection
Heat your cast-iron skillet over medium-high heat until it begins to smoke slightly. Brush the pan with 2 tablespoons of the reserved sun-dried tomato oil to coat the bottom.
Place the patties in the hot skillet. Sear undisturbed for 4 minutes to develop a deep, caramelized crust.
Flip the patties. If using cheese, place a slice on each patty immediately after flipping so it melts perfectly. Cook for another 3 to 4 minutes until the beef is cooked through but remains juicy. Remove the patties and let them rest for 2 minutes.
Optional: Quickly place the burger buns cut-side down in the remaining pan juices for 30 seconds to toast them.
Assembling the Masterpiece
Spread a generous layer of garlic mayo on the bottom half of the toasted bun.
Lay down a bed of fresh arugula or crisp lettuce.
Place the hot, juicy sun-dried tomato beef patty on top.
Arrange a few thin rings of red onion over the melted cheese.
Close the burger with the top bun and serve immediately while hot.
