- Step 1: Frying the Crispy Onion Base
- Heat the oil or ghee in a deep, heavy-bottomed pot (Patila).
- Add the sliced onions and fry over medium-high heat until golden-brown. Set one-third of the onions aside for layering.
- Step 2: The Khatta Potato Secret (Imli Infusion)
- Take your parboiled, halved potatoes while they are still warm.
- Pour 2 tablespoons of the thick Imli pulp directly over them. Toss gently so the potatoes completely absorb the tangy tamarind juices. Set aside to marinate while you build the gravy.
- Step 3: Sautéing the Meat & Aromatics
- To the remaining onions in the pot, add the ginger-garlic paste and sauté for a minute until fragrant.
- Turn the heat up, add the chicken or mutton, and sear until the meat locks in its juices and changes color.
- Step 4: Building the Tangy Korma Base
- Lower the heat slightly and stir in red chili powder, Kashmiri chili powder, turmeric, and salt. Sauté for 2 minutes.
- Add the chopped tomatoes, cover, and cook until they soften completely into a paste.
- Whisk the yogurt and pour it into the gravy along with the dried plums (Aloo Bukhara), the fiery Tatiyya Mirch, and the remaining 2 tablespoons of Imli pulp for that extra layer of tanginess in the sauce.
- Add half of your freshly ground Secret Spice Blend (Jaifal, Jawetri, Sookha Dhania, Zeera).
- Gently slide in your marinated, sour Imli-infused potatoes. Cover and simmer on medium-low heat until the meat is perfectly tender and the oil completely separates from the rich, thick gravy.
- Step 5: Perfecting the Basmati Rice
- Bring a large pot of water to a rolling boil with salt, mint leaves, and whole cumin.
- Add the soaked rice and boil until it is exactly 70–80% cooked (with a firm center). Drain completely.
- Step 6: The Masterful Layering (Dum)
- Leave half of the rich meat and potato gravy at the bottom of your pot.
- Spread half of the parboiled rice over it.
- Layer the remaining gravy, then sprinkle the remaining Secret Spice Blend directly over the top to trap the aromatic flavor.
- Add the fresh mint, coriander, lemon slices, and crispy fried onions.
- Top with the final layer of white rice, drizzle the food color and kewra water, and seal tightly.
- Place on high heat for 5 minutes, then lower to the minimum setting (Dum) for 12 to 15 minutes. Let it rest for 5 minutes, fluff gently, and serve on your grand silver platter!

pro Tip:Do not let your parboiled potatoes cool down before adding the Imli (tamarind) pulp. Pouring the thick pulp over warm, freshly drained potatoes is the ultimate secret. When the potatoes are hot, their starch structure is expanded and porous, acting like a sponge to pull the sharp, tangy khatta flavor deep into the center. If they cool completely, the starch locks up, and the flavor will only sit on the surface.
