  • Olive Oil: 3 tablespoons.
  • Garlic: 3 cloves minced.
  • Seasoning: 1 teaspoon dried oregano or thyme, 1/2 teaspoon paprika, salt, and freshly cracked black pepper to taste.
  • Garnish: A generous handful of fresh parsley chopped.

  • 2 Knife and Cutting Board (for chopping vegetables)
  • 3 Mixing Bowl (for tossing vegetables with oil and seasonings)
  • 4 Spatula or Tongs (for stirring or turning the vegetables)

  2. Parboil (Optional for Speed): If you prefer extra tender vegetables, parboil the potato and carrot chunks in salted boiling water for 5 minutes, then drain well.

  4. Stovetop Method: Heat olive oil in a large pan over medium heat. Add the potatoes and carrots. Sauté for 15–20 minutes until golden brown and fork-tender, stirring occasionally.
  5. Oven Method: Toss the vegetables with oil and seasonings on a baking sheet. Roast at 200°C for 25–30 minutes, turning halfway through.
  6. Season: In the last 3 minutes of cooking, add the minced garlic, paprika, and herbs. Stir gently to ensure the garlic becomes fragrant without burning.
  7. Finish: Transfer to your serving dish and sprinkle generously with fresh chopped parsley.

Pro Tip:Crispy Texture: For maximum crispiness, make sure the vegetables are thoroughly dried after washing or parboiling before they hit the hot oil.
