Ingredients
  

  • 1 kg chicken leg + thigh pieces preferred
  • 5 tbsp thick yogurt
  • 4 tbsp ginger–garlic paste
  • 3 tbsp Kashmiri red chili powder
  • 1 tbsp regular red chili powder
  • 2 tsp garam masala
  • 1 tsp black pepper powder
  • 1 –2 tsp salt to taste
  • 1 tsp turmeric
  • Juice of 1 large lemon
  • For White Creamy Sauce
  • 2 boiled egg whites
  • 2 large garlic cloves or 4 small
  • 2 cheese cubes Amul
  • 2 tbsp cream cheese
  • 2 tbsp fresh cream or milk malai
  • ¼ tsp salt
  • ¼ tsp sugar
  • 2 tbsp milk
  • For Cooking
  • 6 –7 tbsp oil
  • 1 –2 tbsp butter
  • Hot coal for smoky flavor, optional
  • Crushed cardamom 1–2 pods
  • ½ –1 tsp ghee or butter
  • Chopped coriander leaves garnish

Equipment

Method
 

  1. Part 1: The Spicy Red Marinade
  2. Prep the Chicken: Take your 1 kg chicken (leg/thigh pieces) and make deep diagonal slits (incisions) in the meat. This ensures the spices penetrate to the bone.
  3. The Mix: In a large bowl, combine the 5 tbsp thick yogurt, 4 tbsp ginger–garlic paste, 3 tbsp Kashmiri red chili powder (for that deep red color), 1 tbsp regular red chili powder, 2 tsp garam masala, 1 tsp black pepper, 1 tsp turmeric, salt, and the lemon juice.
  4. Marination: Coat the chicken thoroughly in this paste, making sure to fill the slits. Let it rest for at least 2 hours (or overnight for the best result).
  5. Part 2: The Signature White Creamy Sauce
  6. While the chicken marinates, prepare the "Iffa" secret sauce:
  7. Blend: In a blender, add the 2 boiled egg whites (these provide the stable, airy texture), 2 garlic cloves, 2 Amul cheese cubes, 2 tbsp cream cheese, and 2 tbsp fresh cream/malai.
  8. Smooth Finish: Add the ¼ tsp salt, ¼ tsp sugar, and 2 tbsp milk. Blend until it is a perfectly smooth, thick, and pourable cream. Set aside.
  9. Part 3: The Cooking Process
  10. Searing: Heat 6–7 tbsp oil and 1–2 tbsp butter in a wide pan. Place the chicken pieces in a single layer.
  11. The Cook: Fry on high heat for 2 minutes on each side to lock in the juices, then lower the heat, cover the pan, and cook for 15–20 minutes until the chicken is tender and the oil separates.
  12. The Smoke (Dhungar): Once the chicken is cooked, place a small steel bowl or foil in the center. Place a hot coal in it, sprinkle crushed cardamom and ½ tsp ghee/butter over the coal, and immediately cover the lid for 3 minutes to infuse that authentic BBQ aroma.
