Creamy Chicken White Sauce Pasta (No Lumps)

My family's favourite chicken white sauce pasta: penne tossed with juicy chicken and crunchy capsicum in a smooth, cheesy white sauce with chilli flakes. Tips for a lump-free sauce with no raw flour taste, ready in about 30 minutes.

Ingredients

Chicken
  • 250 g boneless chicken cut into small cubes
  • 1 tbsp soy sauce
  • 1/4 tsp salt
  • 1/4 tsp black pepper powder
  • 1/4 tsp dried oregano
  • 1 tbsp cooking oil
Vegetables
  • 1 medium green capsicum (shimla mirch) diced
  • 1/2 cup mushrooms sliced (optional)
White Sauce
  • 2 tbsp butter or margarine
  • 1 tsp cooking oil
  • 1 tbsp garlic finely chopped
  • 2 tbsp all-purpose flour (maida)
  • 2 cups milk warm
  • 1/3 cup cream
  • 1/2 cup cheddar cheese grated
Pasta and Seasoning
  • 250 g penne pasta
  • 1 tbsp salt for the pasta water
  • 1/2 cup pasta water saved before draining
  • 1/2 tsp red chilli flakes plus extra to garnish
  • 1/2 tsp dried oregano
  • 1/4 tsp black pepper powder
  • salt to taste
  • 2 tbsp fresh parsley or coriander chopped (optional)

Equipment

  • Large pot for boiling pasta
  • Wok or deep frying pan
  • Whisk

Method

  1. Boil a large pot of water with 1 tbsp salt. Add the penne and cook 1 to 2 minutes less than the packet time, so it is just al dente. Before draining, save 1/2 cup of the pasta water.
  2. Toss the chicken with soy sauce, salt, black pepper and oregano. Heat 1 tbsp oil in a wok and cook the chicken on medium heat for 4 to 5 minutes until cooked through.
  3. Add the capsicum (and mushrooms, if using) and saute for 2 minutes, so the capsicum stays green and crunchy. Take everything out and keep aside.
  4. In the same wok, melt the butter with 1 tsp oil on low heat. Add the garlic and saute for 30 seconds until fragrant, without browning.
  5. Add the flour and stir continuously on low heat for 1 to 2 minutes, until it smells slightly nutty but is still pale. This cooks out the raw flour taste.
  6. Pour in the warm milk a little at a time, whisking continuously. Keep whisking until the sauce is smooth and thick enough to coat the back of a spoon, about 4 to 5 minutes.
  7. Turn the heat off. Stir in the cream, cheddar cheese, chilli flakes, oregano, black pepper and salt to taste. Turn the heat back to low and stir for 1 to 2 minutes until the cheese melts and the sauce is silky.
  8. Add the boiled pasta, chicken and capsicum. Toss well, adding a splash of the saved pasta water if the sauce feels thick.
  9. Sprinkle extra chilli flakes and fresh parsley on top and serve immediately.

Notes

  • No lumps: use warm milk and add it slowly while whisking. If lumps still form, whisk hard off the heat or pass the sauce through a strainer.
  • No raw flour taste: cook the flour in butter for a full 1 to 2 minutes on low heat before adding milk.
  • Saucy, not sticky: pasta keeps absorbing sauce. Loosen it with the saved pasta water, and serve right away.
  • Storage: keeps 2 days in the fridge. Reheat on low with a splash of milk.
