One day some special guests came over, and fish was cooked for lunch. Usually, people have a habit of drinking milk tea after eating fish, but that day all the guests said they wanted something light instead, and everyone requested qehwa (herbal/green tea) instead of milk tea. Sometimes such situations happen in front of guests when drinking qehwa feels really nice, but right at that moment, I suddenly realized that the qehwa leaves were finished in the house!
I got worried thinking about how I would make qehwa for the guests since there were no tea leaves at all. Then suddenly an idea came to my mind: why not try something different today instead of qehwa leaves? I immediately headed to the kitchen, put fresh lemon zest and a few ginger slices into water, and left them to boil.
As soon as it started boiling, an incredible and wonderful fragrance spread through the kitchen. My heart was delighted just looking at the beautiful golden color of that qehwa, and finally, when a light sweetness of honey was added, the taste became even better. When that qehwa was served to the guests, they praised it so much that day you wouldn’t believe it. That was simply the day when this new recipe was invented, and honestly, now it has become my favorite qehwa recipe that everyone loves.

- Boil the Water: Pour 4 cups of water into a saucepan and bring it to a rolling boil.
- Add Ginger and Zest: Drop the fresh ginger slices and lemon zest into the boiling water.
- Simmer: Lower the heat, cover the pan, and let it simmer gently for about 8 to 10 minutes so the flavors infuse thoroughly into the water.
- Strain and Sweeten: Remove the pan from the heat. Strain the warm liquid directly into 4 individual cups or mugs.
- Add Honey: Stir 1 teaspoon of honey into each cup until fully dissolved. Serve warm and enjoy!
